TURKISH PIDE (PIZZA BOAT)

 

Yield: 3 portions

Dough Ingredients:
High-protein flour – 500g
Cooking oil – 40g
Butter – 25g
Yeast – 6g
Salt – 8g
Sugar – 8g
Warm water – 300ml

Filling Ingredients:
Minced beef – 500g
Onion – 100g
Garlic – 4 cloves
Red & yellow capsicum – ½ each
Green chili – 1
Tomato – ½
Lemon juice – to taste
Olive oil – 50g
Turkish spice mix – 20g
Cumin powder – 10g
Black pepper – 5g
Paprika – 5g
Chili powder – 5g
Salt – 12g
Chicken seasoning – to taste
Mozzarella cheese – 200g

Garnishing Ingredients:
Coriander / Parsley
Spring onion

Glazing Ingredients:
Honey + warm water (mix well)
White sesame seeds

Cooking Steps:
1. Prepare Filling: 
- Set FoodEngine to BBQ Mode (220°C, 10 mins), cook all filling ingredients until fragrant and slightly dry.

2. Prepare Dough:
- Mix all dough ingredients, knead into smooth dough. Cover and proof for 1 hour (until doubled).
- Divide into 3 portions, rest for 30 minutes.

3. Shape & Fill:
- Roll dough flat, add filling and shape into a boat (pide shape).
- Brush edges with honey water + sprinkle sesame seeds.
- Place on baking paper, cut a slit in the center to expose filling, top with mozzarella cheese.

4. Bake:
- Set FoodEngine to Pizza Mode (220°C, 6 mins)

5. Finishing:
- Garnish with coriander & spring onion, brush crust with olive oil.
